Pasta And Green Vegetables recipe

This recipe is great for vegetarians. Pasta should be cooked Al dente (cooked to the tooth)

PASTA AND GREEN VEGETABLES
Cook time: 15 mins
Total time: 15 mins
Serves: 10
Ingredients
  • 700g penne, cooked according to packet instructions
  • 4 tablespoons (60ml) oil
  • 4 cups broccoli
  • 4 cups sugar snap peas
  • 2 cups spinach, chopped
  • 1 cup pistachio nuts
  • Salt and pepper to taste.
Instructions
  1. In a frying pan, heat the oil.
  2. Add the broccoli, sugar snaps and spinach. Cook until all the vegetables are half cooked.
  3. Gently mix in the pasta and season well.
  4. Finish with nuts and serve immediately.
