Curried Couscous recipe

Try something new and surprise your family with this exciting and easy-to-make recipe.

Prep time: 10 minutes

Cooking time: 10 minutes

Serves: 6–7

  • 4 cups couscous, cooked
  • 2 tablespoons butter, melted
  • 1 red onion, chopped
  • 2 garlic cloves, chopped
  • 1 tablespoon curry powder
  • 1 teaspoon cayenne pepper
  • 2 cups canned butter beans, drained
  • ½ cup fresh coriander, chopped
  • 1 tablespoon (15ml) lemon zest
  • Salt and pepper
  • Grilled aubergines, for serving
  1. Heat butter in a frying pan. Fry onions and garlic on medium heat for 3–4 minutes or until soft.
  2. Add remaining ingredients. Season with salt and pepper.
  3. Serve with aubergines.
