Apricot Jam Prawns

Apricot Jam Prawns

Prep time: 60 minutes

Cooking time: 12 minutes

Serves: 3–4

  • 12 king prawns, cleaned
  • 4 tablespoons apricot jam
  • ½ cup tomato sauce
  • 4 tablespoons (60ml) oil
  • 2 garlic cloves, crushed
  • 2 red chillies, chopped
  • 4 tablespoons (60ml) balsamic vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons (30ml) soya sauce
  • Salt and pepper
  • Lime slices, for serving
  • Fresh coriander, for serving
  1. Mix all your ingredients in a bowl. Marinate for 45–60 minutes.
  2. Thread prawns onto wooden skewers.
  3. Braai for 5–6 minutes on each side or until cooked. Serve immediately.
