Spicy tripe

Enjoy the comforting taste of spicy tripe with this great recipe from Ntwenhle Gcabashe 

Prep time: 30 minutes

Cooking time: 5­ hours & 10 minutes

Serves: 3

  • 2 kg beef tripe
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1 green chilli, deseeded and chopped
  • 1 tablespoon cayenne pepper
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 1 teaspoon ground turmeric
  • 2 large carrots, roughly chopped
  • 6 cups (1½ ℓ) water
  • 1 tablespoon soup powder
  • Micro leaves, for serving

Slow cooked trotters and lentils 

  1. Wash tripe thoroughly.
  2. In a big pot, boil tripe, onion, garlic, chilli, spices, carrots and water for 4–5 hours or until tender.
  3. Mix soup with small amount of water. Pour over tripe. Mix well and cook for 8–10 minutes.
  4. Serve with micro leaves.
