Spicy coucous and vegetable bowl

Vegetarian meals don’t have to be boring, not when there is this delectable spicy couscous and vegetable bowl to make, by Ntwenhle Gcabashe

Prep time: 10 minutes

Cooking time: 20 minutes

Serves: 4

  • 2 cups couscous, ready-made
  • 2 tablespoons (30ml) oil
  • 1 red onion, chopped
  • 3 garlic cloves, crushed
  • 2 cups tomato puree
  • 2 red chilli peppers
  • 1 cup mushroom, sliced
  • 1 cup black olives, sliced
  • Salt and pepper
  • ½ red pepper, sliced
  • 1 cup Cheddar cheese, grated
  • Micro herbs, for serving
  1. Preheat the oven to 200°
  2. Heat oil in a frying pan. Fry onion and garlic until cooked. Add tomato puree, red chilli peppers, mushrooms and olives. Season with salt and pepper.
  3. Place couscous into a lightly greased oven dish. Top with vegetable mixture and red pepper slices. Sprinkle with cheese. Bake for 15–20 minutes or until golden.
  4. Serve with micro herbs.
